Forging trans-Saharan ties through cuisine

Team Hybrides seeks to challenge prejudices against sub-Saharan immigrants in Moroccan society by studying the cuisines of sub-Saharan countries and comparing them to that of Morocco. The project brings together Moroccan chefs from different sub-Saharan countries (the pilot project works with Senegal) to create fusion dishes and share them through either a intercultural dinner or a workshop where people learn to cook the fusion dish together. To support this idea, the team analyzed a number of Moroccan and Senegalese dishes to determine which ingredients are shared and which are unique across the studied cuisines. They are also creating an exhibit that allows viewers to interact with the ingredients. Additionally, they created a projection installation where a video collage of historic images of Casablanca are altered based on Senegalese music and projected through an immigration infographic map of Africa.
